Officials will not be handling the ball at all. The problem is handling the ball, then their whistle, than putting their whistle in their mouth.
The umpire will place an orange beanbag on the ground.
The center will put the ball behind the beanbag.
At the end of the play the offensive player takes the ball and gives it to the center.
The umpire will place an orange beanbag on the ground, etc., etc.
On incomplete passes an offensive player needs to go get it, or a ball boy gives an offensive player an new ball and the boy ball chases the incomplete pass.
On any turnover, including punts and KO, someone from the team who owns the ball needs to retrieve it and take it off the field.
At times it may be a little awkward, but it will work out.
